I named this MIL Stew because I got the recipe from my MIL, Kaye. She is a great cook and always has great recipes to share.
2 lbs. ground beef
1 small chopped onion
1 tsp. minced garlic or 1 minced clove
3 cans Campbell's minestrone soup
2 cans Ranch Style beans
1 can Rotel tomatoes
2-3 cups tomato juice
OR
1 small can tomato sauce and water to make 2-3 cups
1-2 tsp. chili powder to taste
Salt and Pepper to taste
Very simple ingredients: ground beef, chopped onion, minced garlic, minestrone soup, ranch style beans, Rotel tomatoes, tomato sauce or juice for thinning stew, pepper, salt, and chili powder to taste. The ingredients shown are a little shy of the actual recipe because I cut it down a bit for Kameron and I. The actual recipe makes a very large pot of stew!
Brown ground beef, onion and garlic.
Add the cans of soup, Rotel, and beans. Add tomato sauce and water or tomato juice until there is enough juice for your liking. (I used about 2 cups of juice). Then season to taste with chili powder, salt and pepper. Simmer on low for about 20 minutes and you can enjoy a simple, but yummy snowy day stew.
