MIL Stew

I named this MIL Stew because I got the recipe from my MIL, Kaye. She is a great cook and always has great recipes to share.

2 lbs. ground beef
1 small chopped onion
1 tsp. minced garlic or 1 minced clove
3 cans Campbell's minestrone soup
2 cans Ranch Style beans
1 can Rotel tomatoes
2-3 cups tomato juice
OR
1 small can tomato sauce and water to make 2-3 cups
1-2 tsp. chili powder to taste
Salt and Pepper to taste

Very simple ingredients: ground beef, chopped onion, minced garlic, minestrone soup, ranch style beans, Rotel tomatoes, tomato sauce or juice for thinning stew, pepper, salt, and chili powder to taste. The ingredients shown are a little shy of the actual recipe because I cut it down a bit for Kameron and I. The actual recipe makes a very large pot of stew!

Brown ground beef, onion and garlic.

Add the cans of soup, Rotel, and beans. Add tomato sauce and water or tomato juice until there is enough juice for your liking. (I used about 2 cups of juice). Then season to taste with chili powder, salt and pepper. Simmer on low for about 20 minutes and you can enjoy a simple, but yummy snowy day stew.

March Blizzard

We woke up to a blizzard this morning and the weatherman says that we could get 7 to 10 inches of snow by this evening! The wind is blowing 40mph and the wind chill is 3 degrees! Needless to say, we are staying in, close to the fire today. Campbell is wearing his snow outfit today and is currently taking a nap in the recliner. I am preparing to make MIL stew (recipe to come later), and Poineer Woman's cinnamon rolls. Kameron is cleaning the barn (with the heater at full speed). Have a great weekend everyone!

BRRRRRRRR!

One Month Old!

Campbell was one month old on March 25th! Time passes so quickly, but we cannot imagine what our lives were like without him! He is such a little angel and we are truly blessed. We will be taking monthly pictures of him on Daddy's trophy saddle. Before we know it he will be sitting in his own saddle, riding with Mommy and Daddy. So, we are savoring every moment with him while he is little!

Spring Break 2009

Here are a few pictures from spring break. We had a cookout on Friday night. Papaw cooked some delicious hamburgers and hot dogs and Jerilynn baked up a super yummy peach cobbler. We all got some sweet sugar from Campbell, too!

Mommy loves Campbell's sweet sugars!

Campbell's First Road Trip

Campbell had his first road trip during spring break. We packed an overnight bag and headed to Lubbock with Nana. We met Jerilynn, Chance and the kids on Wednesday for a little shopping, then everyone went to Main Event for some laser tag and bowling. Papaw drove in from Granbury and stopped by to pick me and Campbell up at the hotel. We went to Main Event to join the rest of the gang. We did a little more shopping on Thursday, went to the cupcake store (see Over The Hedge blog for that review!), and ate at Freebirds World Burrito before heading home. It was a great trip and Campbell was a trooper!

Mimi and Grampy's Visit

Mimi and Grampy (aka Kaye and Wayne) visited for a few days last week. Grampy did not have to go to the offshore rig, so they both got to visit! We had so much fun and they got some good kisses from Campbell. Mimi treated us to her fabulous fried chicken. She also brought some great pictures of Kameron when he was little. We had fun reminiscing over the old pictures of the family!

Being A Star Is Tough

Campbell was completely exhausted after a photography session at the house today. He was very patient for the first 30 minutes, but that was it! His attitude about having his picture taken is the same as his Daddy's (and most men I guess). We will have to wait and see how the photos turn out. Stay tuned...
